Egg Noodle in Chicken Curry


  • 100 grams egg noodle
  • Vegetable oil
  • 2 tablespoons red curry paste
  • 200 grams coconut milk
  • 1 tablespoon curry powder
  • 100 grams chicken breast or thigh
  • 1 tablespoon sliced ginger
  • 1 tablespoon white sugar
  • 1 tablespoon fish sauce

Garnish Ingredients

  • Spring onion
  • Pickled lettuce
  • Shallot
  • Lemon

Cooking Instructions

  1. Boil egg noodle for about 5 minutes, then rinse in cold water.
  2. Deep fry half the egg noodle in vegetable oil until crispy.
  3. Boil coconut milk and add red curry paste.
  4. Stir well until the paste blends, then add curry powder.
  5. Add chicken, sugar, sliced ginger and fish sauce.
  6. Serve by placing egg noodle in a bowl and add the gravy.
  7. Decorate with deep fried egg noodle, pickled lettuce, shallot, and lemon.
